Sausage Stuffed Peppers

Ingredients:
5-6 medium bell peppers (tops cut off and cleaned)
2-3 tablespoons olive oil
1 medium yellow onion, diced
1 teaspoon kosher salt
10 cloves garlic, minced
3 tablespoons tomato paste
1 tablespoon Italian seasoning
½ – 1 teaspoon red pepper flakes
1 pound hot Italian sausage
15 ounces diced tomatoes (1 can)
1 cup cooked white rice
½ – 1 cup chicken broth
Handful of fresh basil (optional)
6 ounces shredded mozzarella cheese
4 ounces shredded parmesan cheese
Instructions:
Preparation:

Preheat the oven to 375°F.
Cook white rice according to package directions.
Sautéing Vegetables:

Heat a skillet with olive oil.
Sauté onions and red bell pepper with a pinch of salt until softened.
Add garlic, tomato paste, red pepper flakes, and Italian seasoning. Cook until garlic is aromatic.
Cooking Sausage:

Add more olive oil, then introduce Italian sausage.
Break up the sausage into small pieces and cook until fully done.
