Vegan Chocolate Cake with Vegan Chocolate Swiss Meringue Buttercream

Ingredients

Vegan Chocolate Cake Layers

  • 1 cup non-dairy milk I use Earth’s Own Oat Milk
  • 2 tablespoons apple cider vinegar
  • 1 1/2 cups 340 grams white sugar
  • 2/3 cup 120ML vegetable or canola oil
  • 2 tablespoons vanilla extract
  • 3 cups flour
  • 1 cup hot coffee
  • 2/3 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Vegan Chocolate Swiss Meringue Buttercream

  • 1 cup aquafaba liquid from a can of chickpeas
  • 1 cup sugar
  • 1/2 teaspoon cream of tartar
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup vegan butter softened
  • 1 cup vegetable shortening
  • 1/2 cup melted chocolate
  • 2 tablespoons cocoa powder
